So this recipe is pretty great. And easy!
In the InstaPot, sauté until fragrant:
- 2 Tbsp olive oil
- 5 cloves of garlic, minced
- 1 large yellow onion, diced
Add in and pressure cook (high) for 25 minutes, decompress naturally:
- 1 lb (2 cups) dry white beans
- 1 Tbsp Better-Than-Bouillon Vegetable Flavor
- 2 tsp fresh rosemary leaves, minced
- 2 tsp fresh thyme leaves, minced
- 1/2 tsp red pepper flakes
- Rind of 1 lemon
- Rind of parmesan cheese wedge (the more the merrier
Transfer to a bigger pot, remove lemon and parmesan rinds, bring to simmer, stir in:
- 1 bunch of kale, stems removed, chopped
Immediately remove from heat. Serve with:
- Grated parmesan and lemon wedges
