I woke up in the canyons behind and above Lakeview, Oregon. Ate a freeze dried breakfast skillet and drank freeze dried coffee while I got some work done, answering emails while it was still 15 degrees outside.
It's not a long drive between Lakeview and Adel across Warner Pass. But somewhere coming down the east slope off the mountains I pulled down into a BLM canyon to get some beans going. I've been hauling an awkward number of root vegetables, just picked up in Bend as part of the Rainshadow CSA. I also had a mix of dried Rainshadow beans, their first crop from late last year.
Throw everything into the Instant Pot:
- 1 cup dried Rainshadow beans (mostly some manner of white bean)
- 2 cups water
- 1 medium purple onion, chopped
- 2 knobby carrots with wooden tendencies, chopped
- 2 small potatoes, chopped
- 1 tsp ground turmeric
- 1 tsp New Mexico chili powder (the best chili powder)
- 1 Tbsp olive oil
- 1 tsp salt
Set it to pressure cook for 25 minutes. Might as well get some miles in.
I found another pull off where I could whittle on a hiking stick while the dog whittled on every stick. She played in that snow melt for over an hour. Now she's sleeping hard.
